Annelin Eriksen har arbeidet etnografisk i Vanuatu, i det Sørvestlige Stillehavet, siden 1995. Hun har arbeidet både på øyen Ambrym og i hovedstaden Port Vila. I nyere tid har hun også interessert seg for, og publisert om, globale religiøse bevegelser. Hennes forskningsinteresser har hovedsaklig vært temaer som kjønn, sosial og kulturell endring, religion, vitenskap og teknologi. Hun har nylig endret forskningsfokus til forestillinger om fremtiden, og siden 2018 har hun arbeidet etnografisk og antropologisk med å beskrive og forstå utviklingen av bioteknologi og AI teknologi som skal forsterke menneske på ulike måter: øke levetid vesentlig ("reversering av aldring") og det man kan kalle "teknovitenskapelige former for udødelighet". I all hovedsak foregår den nye forskning i USA og i Europa. Hovedfokuset her er å forstå hvordan ideer, forestillinger og visjoner om et nytt menneske (spesielt et kunstig forsterket menneske) i fremtiden, har konkrete sosiale effekter i nåtiden, i alt fra politisk utforming til dannelse av nye religiøse og ideologiske bevegelser.
Eriksen har ledet det NFR-finansierte prosjektet Gender and Pentecostalism (2013-2017), hvor Melanesia og Afrika var regionale fokus. Et av hovedtemaene for dette prosjektet var religiøs og kulturell endring, og spesielt endring av person-begrepet. Utvikling av ny komparativ metodologi var også sentralt i dette prosjektet. Dette fokuset er videreført i Eriksen sitt nye NFR-finansierte forskningsprosjekt, Technoscientific Immortality: A Study of Human Futures, som handler om endringer i forestillinger om hva mennesket er og kan være. Eriksen har publisert en monografi om Vanuatu, Gender, Christianity and Change (Routledge, 2008), og har medforfattet en monografi om pinsebevegelsen, Going to Pentecost (Berghahn Books, 2019), med Ruy Llera Blanes og Michelle MacCarthy. Sammen med sin ektemann, Knut M. Rio, fikk Eriksen i 2017 utdelt Fylkesakersprisen av Det Norske Videnskaps-Akademi for fremragende forskning innen sosialantropologi.
