Hoffmann arbeider med moderne tysk og europeisk historie (1780-2000), med hovedvekt på politikk- og kulturhistorie. Spesialfelt er nasjonalisme, antisemittisme og xenofobi; migrasjons- og minoriteters historie (særlig jødenes historie); og bruken av historie i det offentlige rom (historiekultur).
