Ivar Rønnestad har arbeidet med studier av fiskens fysiologi siden 1988. Hans hovedforskningsfelt er innen ernæringfysiologi, energiomsetning og fordøyelsesfysiologi hos fisk. Tidligere arbeidet han spesielt på larvestadier, men. For tiden arbeider han med peptidhormoner som er involvert i regulering av appetitt- og energiomsetning, tarm-hjerne aksen, fordøyelsesfysiologi, transportfunksjoner og omsetning av aminosyrer. Studiene skjer i hovedsak på laks, men inkluderer også bl.a torsk, kveite og sebrafisk

Han arbeidet tidligere med dykkefysiologi på NUTEC, der studiene var relatert til temperatur og respirasjon i forbindelse med dypdykking i Nordsjøen (1982-87). Han var også en tid tilknyttet Havbruksstasjonen i Austevoll (1988-89) og arbeidet der med stamfisk. I postdoktorperioden på NIFES (1993-97) arbeidet han med studier av fettsyrer og vitaminer hos fiskelarver. Han har vært ansatt ved Institutt for Biologi (tidligere Zoologisk institutt) fra 1996.

Han har hatt forskningsopphold i Japan (Kyoto University og Kagoshima University), Israel (National Center for Mariculture, Eilat), Portugal (University of Algarve), USA (University of California Los Angeles, UCLA) og har et omfattende nasjonal, europeisk og internasjonal samarbeid.

Han veileder for tiden 5 PhD kandidater og 3 Master studenter ved UiB og utenlandske universitet. Han har tidligere veiledet 11 PhD og 17 Master kandidater samt 4 postdoktorer.

Ivar Rønnestad underviser i fagene BIO104 (Komparativ fysiologi) og BIO 291 (Fiskebiologi II- Fysiologi) i tillegg til veiledning av postdoktor, PhD og Master studenter. Han leder EcelAQUA Sommerskole som er et samarbeide mellom Universitetet i Bergen, NORCE og syv ulike universiteter og forskningsinstitutt i Japan. Sommerskolen har også deltagere fra USA og Canada. 

Gjennom BioCEED har han samarbeid med forskere (Sehoya Cotner and Seth Thompson) innen pedagogikk ved Universitetet i Minnesota.

Han mottok Olav Thon Stiftelsens nasjonale pris for fremragende undervisning i 2019

Ivar Rønnestad har hovedfag (cand scient) i zoologisk og human fysiologi (1984) og dr. grad (dr. scient) i miljøfysiologi (1993) begge fra Universitetet i Bergen.
