Gulbrandsens forskning har i særlig grad vært rettet imot sentraliserte politiske systemer, først med etnografisk fokus på utviklingen av Tswana-kongedømmene i Botswana fra slutten av den 18. århundre. I de senere årene er dette arbeidet videreført med en bredt anlagt analyse av fremveksten av den moderne staten i Botswana i relasjon til, på den ene side, den post-koloniale reproduksjonen av Tswana-kongedømmenes kosmologi, kulturelle/symbolske resurser og sosio-politiske strukturer og, og på den annen side, global markeder for diamanter og kveg. Dette arbeidet representerer en syntetiserende videreføring av hans tidligere forskning som omfatter studier av 1) betydningen av imperialistiske krefter knyttet til handel, evangeliserende misjonering og politisk kolonisering for politisk og romlig sentralisering av Tswana-kongedømmene fra før-kolonial tid , 2) transformasjon/reproduksjon av kongedømmenes symbolske kapital og autoritetshierarkier i en post-kolonial kontekst, spesielt med referanse til deres politisk-juridiske institusjoner og praksiser på alle nivåer - fra avstamningsgruppe til kongssete; 3) klasseformasjon/arbeidsvandring, 4) kultur-økologiske og politisk-økonomiske aspekter ved Botswanas kveg-produksjon og land reformer, 5) kulturell konstruksjon av det rommelige, særlig med referanse til fremveksten og vedlikeholdet av de eksepsjonelt store, kompakte Tswana-landsbyene; 6) politiske aspekter ved okkulte praksiser, spesielt i studier av folkelige diskursive praksiser som tematiserer moderne politiske lederes maktmisbruk med referanse til Tswana kosmologi.

Samtidig som Gulbrandsen holder fast ved sin forskningsinteresse for Botswana, har han startet et nytt prosjekt på Sardinia som et etnografisk grunnlag for komparative studier med Botswana av kulturelle og sosio-politiske betingelser for statens forankring i befolkningen. Han er videre opptatt av den historiske utviklingen av kulturelle og sosio-politiske motsetningsforhold mellom kyst/lavland og innland/høyland, med særlig fokus på kontemporære transformasjoner av ulike voldspraksiser (baditismo, faida etc.). Et annet komparativt prosjekt henvender seg til betydningen av patrimoniale strukturer (stamme-kongedømme vs. post-føydal klientisme) i en moderne statskontekst, med særlig fokus på 'korrupsjon' og andre former for skjult maktutøvelse. Endelig arbeider han med transformasjoner av to av Sardinia's mest storslåtte ritualer - Sartiglia (Oristano) og l'Ardia (bl.a. Sedilo) - med særlig referanse til skiftet fra premoderne til moderne kontekst.

Gulbrandsen gjennomførte sitt første forskningsprosjekt på grunnlag av feltarbeid i en aluminiumsbedrift (Årdal i Sogn) hvor han analyserte forholdet mellom, på den ene side, den sosialdemokratisk funderte samarbeidsideologi og Hovedavtalen som ramme for forholdet mellom arbeidskjøper og arbeidsselger/fagforening, og på den annen side, bedriftsledelsens maktutøvelse og arbeidernes ulike motstandsstrategier.

Gulbrandsen har siden 1976 forelest på alle nivåer over en serie sentrale antropologiske temaer, i særlig grad politisk antropologi og teoriutvikling i antropologien.
